From your kitchen
a 9 by 13 baking dish, a spoon, an oven at 375, shredded cheese if you have some; the queso does the job without it.
What to do
- Oven to 375. Mix the refried beans, the drained black beans and the green chiles in a bowl. That is the filling; that was the hard part.
- A thin layer of enchilada sauce in the dish. Tortillas, torn to cover. Half the beans. Queso. Sauce. Repeat. Finish with tortillas, the rest of the sauce, and queso over the top.
- Bake 30 minutes, until the edges bubble and the top has some colour. Let it sit 5 minutes or it will not hold a square.
- Cut it like lasagna. Serve it like you meant to make lasagna.
